I substituted red bell pepper for tomato, frozen peas for snow peas, and used one tsp powdered ginger instead of fresh. I haven’t tried that, but if you do let me know how it goes! I made this recipe tonight and it is absolutely amazing. I used only one can of (lite) coconut milk and used veggie bouillon / broth for the rest. By the time I realized that more veggies were needed, I felt like it was too late to add them. I used broccoli, carrots and red pepper and went very, very, easy on the cayenne ;).
